Then begins the slow transformation of the wine into vinegar according to the unchanging rules that only Jean-Fracois Martin still applies. The wines will slowly metamorphose for three weeks in 220 litre barrels called "vaisseaux" at the constant temperature of 28 degrees, sheltered from the light.
